Very interesting! All possible solutions 0, 6, 18, ..., 81 have the same symbols. It's just that the symbols keep changing on the table. :)

Whichever two digits that you choose, after substracting the "new number" will end up being a number which is a multiple of 9.

With that, only one symbol will match .

Let the no. chosen be 10*X + Y.
Following the operation request would lead to
10*X + Y - (X + Y)= 9*X
which is a multiple of 9.
All "multiple of 9" symbols are the same. Hence there is only one answer.
